Healthy homemade protein granola (vegan & oil free)

Once you’ve tried this homemade granola, you’re never going to go back to a supermarket granola! It contains 14g of proteins which is 75% more than most granolas. It is also super healthy and packed with vitamins and minerals – iron,  calcium, zinc, potassium, vitamins A, C, K, E, D, B1, B6, B2 omega 3, 6, 9 & GLA + loads of fibre, It is so perfect to start your day or have as a snack when your energy is low, I can’t wait for you to try it!

It will make about 15 servings but it depends how much you serve obviously.

Ingredients

Dry ingredients

3 cups of oats
½ cup of almonds
½ of walnuts
½ cup of pepitas
¼ cup of  cinnamon
1 tb spoon of tumeric
½ tea spoon of ginger

Wet ingredients

1 cup of chickpeas
⅓ cup of peanut butter
A quarter  cup of rice malt syrup
A quarter of a cup of water
1 tea spoon of vanilla extract
¼ of rice protein powder
1 tb spoon of hemp flour or quinoa flour or chic pea flour

Add-on ingredients

½ cup of goji berries
½ cup of dried cranberries
¼ cup of hemp seeds

Recipe

Preheat your oven at 170 degrees

Step 1

Chop the nuts.
Combine and mix the dry ingredients together. Reserve.

Step 2

Mix the wet ingredients together except the water. You can smash the chickpeas before hand with a fork or a mixer if you prefer. You should obtain a pretty smooth texture.

Step 3

Add water to have a smoother texture. Add little bits by little bits so it does not get too liquid. If the texture was already pretty smooth (step 2), don’t add water.

Step 4

Miz the dry and wet ingredients together. I usually pour the wet part and then use my hands to mix it.

Step 5

Pour the granola on a baking tray with baking paper and flatten it. You can now bake it in the oven for 30 minutes. I check now and then to see where it’s at but usually when it’s smelling so good in my kitchen it’s ready.

Sometimes the granola is a bit soft, so I turn the oven off and leave it to dry in the oven for another 30 minutes.

Step 6

Once it’s a bit cooler I add the goji berries, cranberries and hemp seeds.

I then break the granola and mix with the last ingredients and pour into a jar and try not to eat it all straight away.Screen Shot 2018-10-28 at 6.31.46 AM.png

If you like granola, cereals and really looking for a healthy vegan alternative, you really have to try this recipe. It will give you so much energy in the morning and fill you up with vitamins and minerals. I usually serve mine with homemade soy yogurt, fruits and chia seeds.
